My go to meal is a Sunday Roast, complete with Yorkshire Puddings and as we are heading towards winter in Australia I’m spending more time in the kitchen. What the? What is a Yorkshire Pudding? Other than delicious, they are a side dish made from eggs, butter, and flour, that have been placed in a hot oven for about 25-30 minutes.
There are a bunch of different ways to make Yorkies, but the basic recipe stays the same.
Ingredients:
- 2 large eggs
- 100ml milk
- 100g plain flour
- pinch of salt and pepper
The method is pretty simple:
- Heat the oven to around 220C, normally it’s hot already from cooking the roast, just make sure you dedicate your oven to Yorkies and that the meat and vegetables are already out
- Put a small amount of oil with a high smoke point into the bottom of a muffin tray (I normally go with vegetable oil but I’m playing with this)
- Put the muffin tray into the oven for at least 15 minutes
- Mix the ingredients in a large bowl, air bubbles are your friend as it helps the Yorkies rise
- Take out the tray and pour the batter into the tray, try to keep this as clean as possible as it will stop heat loss across the top of the tray
- Put the tray back into the oven and leave the Yorkies alone for at least 15 minutes, potentially up to 25 depending on how they are rising. Messing with them or opening the door will result in flat Yorkies
- Take out the Yorkshire Puddings and add to your dinner
- Lick lips and enjoy

I’ve had mixed experiences with Yorkies, most of the times I’ve made them they come out looking something like the below, flat small discs that are tasty but heavy.
